When I was young, I liked a meatloaf dinner, but the real treat was the cold meatloaf sandwich the next day! The recipe I use is here and my mother passed it along to me after reading it on a box of Quaker Oats. I really like the consistency of the final product.
I cut this loaf into 8 slices and served each on two slices (56 grams) of whole wheat French bread (that is what the store calls it but it is more like a soft Italian loaf) with canola oil mayonnaise and mustard. I also ate a dill pickle spear and a handful of baby carrots. It was very filling and again made me marvel that I can eat like this on a diet!
